I would like to capture more fields (e.g. summary, desciption, case number, priorty..) when customer send E-mail to raise Helpdesk ticket on JIRA service desk.
How can I do this? Thanks

You could try to do something with Jira Service Desk Automation, but it is not much flexible in your case.
You can have a look at plugins like JETI or JEMH:
