Hi, Kathleen.

The default value of a field can be set, but it's system wide.

The best way to enter a default value is to add a post function to set the value on the 'Create Issue' transition to set the field from a fixed value. This post function may be available for example, in the JIRA Suite Utilities plugin or maybe the JIRA Misc Workflow Extensions plugin, as it's not a built-in post function.

Be careful, though. You should test it, but it may override values set on creation.
