How can I exclude certain labels when searching?

I like to exclude 2 lablels (let's say "red and "blue" label)

How do I construct the JQL? I seam to not be able to get the right result.

I write:

...and labels not in (red) or labels not in (blue)

is this correct?

It is a bit more easier.

labels not in ("red","blue")

How about if I want to find tickets with Red or Blue label?

Just remove the not

labels in ("red","blue")
