Is there a way to change the issue type linked to a request type in Service Desk? Or do I need to delete and re-add?

Curentley, you have to delete the request type in order to change the corresponding issue type. However, there is a feature request regarding this matter: https://jira.atlassian.com/browse/JSD-349
Make sure to vote for it in order to increase it's visibility.
