Hello,
When customizing the view of the issue navigator I can select "Resolved" to get a column with the date its being resolved.
How can I get a column for the date the issue was started (In Progress) )

Easiest way is probably to create a custom field called Started, set it up so that it gets populated by a transition to In Progress and then display this on the Issue Navigator
The time will be set again if the issue passes through this transition .

It will, but we can protect against that - use a Condition that guards it so it's only ever set on the first transition
