I created projects Software managed by the company realized that company members can see the project.

I would like the project to be hidden and viewed just because I add it to the project, how can I do that? I didn't find the option.

The ability to view or browse a project is associated with the permission scheme. At least in a CMP project. Inspect the permissions of the project that you do not want viewed by “everyone“ and assess what roles and or groups are given browse among other permissions. It is likely that your projects are starting with a default permissions game and your default permissions game probably includes a role when adding new users.
