Create Issue Type: Go to Jira Settings>Issues>Issue Types, click Add Issue Type, name it, and select Sub-task as the type.

Add it to Scheme: Go to Issue Type Schemes, add the new sub-task issue type to the scheme used by your project (Scheme used by the primary issue type).

If you want the new sub-task type to follow a specific workflow, go to Jira Settings > Issues > Workflows. Add your existing workflow used by your primary issue type or create one on your own for this sub-task issue type.
