Handling market specific builds: one or many projects?

Hello, 

Considering we have multiple different bulds for different geograpical areas (markets), I'd like to harmosie the project structure.

Is there a way to handle different geographical builds within one project? 

And lastly, should I create one project for each OS (iOS and Android)?

It really depends on how your processes will work.  If I was working on an app I would do it in a single project since there is so much overlap.  I would use components and issue types to help organize the work.  For different geographical builds, I would suggest just having different releases for each.  There are also apps in the marketplace that allow for sub-releases.
