Here's how I handle it... I mostly use groups
Open https://admin.atlassian.com/ - got to Directory --> Groups
For external users, I have 2 groups, 1 for access to the product and 1 for access to projects, where access = None
The product access group is;
jira-software-guests-<my Jira org name>
The project access group can be something like:
jira-software-guests-<my Jira org name>-<external users company name>
Add the external user to both groups
Then on the Jira project - Project Settings --> People, add the group:
jira-software-guests-<my Jira org name>-<external users company name>
Make sure the product access group is not added on the project
This will give them access to Jira and then only the individual projects you choose

This is related to the permission schemes used on company managed projects or based on the open or private setting on team managed projects
If the users should no see some team managed projects, set those projects on private, make sure the required internal users do have access.
If the user need to see som company managed projects, create a new permission scheme where only the group of internal users has browse permissions and associate this permission scheme to all project that should not be visible to the customers.
