So my question is, how do I change the settings of my user so that when I move items in the workflow it does not change the assignee to me?
Got it. Simply edit the post function in the workflow, and remove the "assign to current user function"

It's likely that there's a post-function on the workflow associated with your project that is assigning the case to you when you transition it. Check the documentation at https://confluence.atlassian.com/display/JIRA/Advanced+workflow+configurationif you are not sure how to do that. ;)
