I am wondering is it possible to automatically escalate an issue priority once a certain time passes since the issue is raised?
For example:
Issue is opened with Medium priority and if its not resolved in 2 days priority goes to High priority,

You could do that with an Automation for Jira rule, using a scheduled trigger. Please look at these examples and the documentation for ideas:
