When an incident is closed, it doesn't show in the incident list with a strikethrough, making it difficult to see at a glance which incidents are closed

The strikethroughs show for issues that have a Resolution. You should update your workflow for the Incident issue type to set the Resolution field with a Post Function when the issue is Closed/Done.
