I'm using mail handlers within specific projects for creating tickets by customers. Of course those people don't have a JIRA-licence.
Do you know a possiblity for sending them an auto reply by mail with a text that is predifined and the ID of the ticket which has been created?

JIRA does not provide the functionality to set this up. You could have a look at the Enterprise Mail Handler which might provide this functionality, just keep in mind that this is a 3rd party paid add-on.
