Hey!
Is it possible to somehow configure Jira notifications that it's does not sends notifications when some specific field is updated?
Basically when "issue updated" rule is triggered and if this is done by one specific field then notification is not sent.

Not out of the box. I'm not aware of a plugin that would do that either.
