Should I be using JIRA Confluence instead?
"Jira Confluence" is not a thing. Jira is software built for issue tracking, Confluence is another piece of software built as a wiki-form of document editor.
I think you need to explain what you're trying to do, to put your question in a context wehere we can help you.
The doc you have is about installing Jira (Core - you can worry about Jira Software and Jira Service Desk later if you want) on AWS, and you've selected the "Data Center" version, which is the high-availability solution. Is that really what you want to do?
