Currently I am not getting notification emails when a ticket is updated in my JIRA system. I do not see anywhere that I can configure the SMTP email settings? Am I missing something? I thought this would automatically be setup and part of the ondemand services that I have.

Is it just you making changes? If so, you probably have the "do not email me on my own changes" flag set on your profile.
If you're missing email from other people, then check the permission scheme to make sure you *should* be getting things - (e.g. mail assignee if issue is commented on).
Failing those two, contact support...
