There are lots of ways you could do this, but I would suggest leveraging the Versions field to start.

You could also do this with labels, or through many very good 3rd party addons.
I've recently been toying with Version Sync (https://marketplace.atlassian.com/apps/1219807/version-sync-for-jira?hosting=cloud&tab=overview) and it's a nice tool if you have to organize releases across multiple projects.
(I don't work for them)

There is also a number of Release Calendar apps that can enable "Releases", which can be leveraged in a similar way.
