I need to be able to add full customer details, addresses, contacts etc is this possible so that then tickets can be assigned to that customer and we have their full details?

All I can see is the option to add an email so that the ticket is assigned to the customer?

JIRA allows you to add custom fields to issue screens, so you can add whatever customer data fields you want.  More information here: https://confluence.atlassian.com/adminjiraserver071/adding-a-custom-field-802592519.html
