We have a use case where one of our projects in Jira Cloud uses Slack to create issues within their project. They want to be able to display the/set the Category field within Slack. Is there any way to add or force that field to show within Slack when creating an issue?
I suspect that depends upon the marketplace app you are using to connect Jira and Slack. Please check with your Jira Site Admin and then review the marketplace information to learn which fields can be used / configured to create Jira issues from Slack.
