I would like to see a report (or even in my dashboard) showing when a "Story" was created and when the due date is set. For example, a Story was created on October 1, 2024 and the due date was October 3, 2024. I want a clear, concise visual showing when a "Story" was created and when the "Due Date" is set.
My goal is to see how much turnaround time my team is given with Stories that are issued to them.
I think some of the options suggested by Bill, such as custom fields and automation, might work for you.

Issue History for Jira provides a separate column that captures the date of change for any field.
In this case, we can add the Due Date and Created fields, set dates, project, or other filters.
Here is an example of the report where you can see the dates when each issue was created, when the due date was added, and when it was changed.

There is nothing built-in which can report on when the Due Date field value was set, even though that information is in the issue history.

I guess by "when the due date is set" you actually want to see the value of Due Date field...
If so, you can easily display the issues from a filter along with their Creation and Due Date in form of table on dashboard by using the Jira's native Filter Results gadget.
