You may create a workflow transition then link it into a status, further information and details please have a read on the following documentation:
check Admin->Issues->Issue Attributes->Statuses you can create your custom statuses here and they are global to all workflows. Then configure accordingly to your workflow by following the Daryl link.
Otherwise there is an option Add/Create a Status in the workflow itself and create there and configure in workflow.
