Change Default Assignee for a Step

We initially setup a few steps.  Now Jira programmer is gone and 2nd step needs to change.  Need to change title and assignee (i.e. whoever has to approve the transition) for 2nd step (Internally Approved).  I am administrator.

I can't find a way to change the assignee when transitioned to this step.

Completely Lost

Also, somehow I changed the name (Pending Anze Approval) in the workflows, but it doesn't show in the Kanban.

Are you not using transition screens? That will help you to acheive your needs. I will attach few links here which will help you to use transition screens in the workflow. And the screenshot that you have attached is a Jira Cloud variant.
