In the details view of a closed issue, is it possible to have the resolution field editable on the spot like priority, assignee etc. That way I can change the value to 'not a defect' instead of using 'fixed', without having to reopen it to do so and then closing it again.

Your answer depends on the wokflow selected for your project. I think the default for the GH Simplified Workflow I use has a setting that once an Issue is closed it's uneditable, but you can fix that by changing that setting and re-indexing. Whether or not you want to do that depends on your comfort level with that and the amount of issues you have in your project. It can be a little tricky to figure out, but if it saves you a lot of needless clicking it should be worth spending a little time on it now.
