Can't have Unassigned statuses in Kanban

Am I doing something wrong? I've just tried to setup a Kanban in a new project, and I have a status call 'Closed' that I don't want to appear on the board as it's an archive for tickets that won't be done. 

I'm sure I've done this a million times before, but now I can't. How do I have a status that isn't on the board, or is this another one of Atlassians wonderful 'upgrades'?

To drop a status off a board, go to board config and then "columns", find the status and drag it over into the "unmapped" column.

This only applies to company-managed (classic) projects though, for team-managed (next-gen) boards, you're not expected to have off-board status, so you can't do it (this hasn't changed)

OK, it's the naming that's changed since the last time I implemented something. I will delete this one and start again with a classic project.
