JQL is great for searching Issues, but what about queries for other data such as users or projects? What if I need to find how many of my 600 users are set up for a particular business line? Or how many projects have been set up by Jane smith? etc.
Is there a method to get at ANY of our data hosted in Cloud?
Also, we run JIRA Cloud. Does Atlassian provide a database schema?

There isn't a database schema for JIRA Cloud as accessing the database is one of the Restricted Functions in Cloud.
While JQL is limited in nature, here is the Advanced Searching guide for JQL that can help you better understand what is available.
You can search the Marketplace for JQL and see if there are any third party add-on such as JQL Search Extensions for Jira, JQL Plus or ScriptRunner.

Thank you for your response. So if JIRA Cloud users/companies need to gather additional data for internal queries, do they perform daily exports in XML and load locally? How else would we answer these other questions, outside of questions about Issues?
