I would like each customer to see his dashboard with number of items in each status. Thus I would create a dashboard for each customer.
Can I restrict a user to have access to just this part of Jira?
When JIRA is set up to not allow anonymous access, a user needs the following to see the gadget content of a dashboard:
Dashboard shared to them by group or project (or all logged in users)
All saved filters used by dashboard gadgets shared to them by group or project (or all logged in users)
the "browse issues" permission on each project in the scope of the filters.
Essentially, in a login required system, you need to be able to see the issues to see stats about them on a dashboard. I know this is not the answer you want.
