Can I configure ticket work-flows that apply out of hours?

We want to apply different routing for certain tickets out of office hours. Is this possible?

You could have a different issue type or project with a different workflow assigned to it. Then you can use something like the Automation add-on https://marketplace.atlassian.com/plugins/com.atlassian.plugin.automation.jira-automation-plugin to move issues into that workflow when the time period starts, and back out when it ends.
