I only see the 5 available statuses in the above picture instead of the full array (in review, backlog, etc.) and would like to include more options. Does it make a difference in what is available if it is a service desk vs. a regular kanban?
The status shown in here depend on the workflow you are using for the projects the board is looking at.
To "include more options", you will need to edit the workflow, adding the other status to it so that the board can use it.
Workflows are JIRA artefacts which Service Desk and Software layer functions on top of, so no, it doesn't matter what you're using the workflow for, you just need to add the status to it.
