I created a few custom fields for my business project board and then in the board view I want to filter for some of those fields and unfortunately, they wont appear in the filter section...
For instance,
I created a field called "Impacted Customer" based on a label field and the "Impacted Customer" custom field doesn't appear as option to be filtered in.
The custom field seems to appear as an option for filtering only if the field is based on a dropdown one and that is not helpful for me, because this particular custom "Impacted Customer" field is a multi-selection one..
This is very annoying, it should be as simple as every custom field created would appear as an option to be filtered, but no...

Welcome to the Atlassian community.
For a Business/Work Management project not all custom fields are supported for use in filters. Refer to this for more information on what fields are supported.
There are several open Suggestions concerning filtering in Business projects, but I did not see on specifically for custom Labels fields. I may not have tried the right search criteria to find it if one does exist.
You could use the Feedback button within Jira (under the Help option) to provide that suggestion directly to Atlassian, or ask you Jira Administrators to open a support case to get such a change request opened.
If you find a link to or get a new change request opened, if would be nice if you post the link for it here so we can upvote it.
Just to clarify and double check that everyone understands the issue at hands, I have these fields for the Task type:
And if one checks the picture I shared in the beginning of this ticket, will see that the "Task Effort" and "Business Value" fields appear as options to be filtered, but that the "Center of Competence" wont...
My question is why? and is there a way to make it appear there...

The reason the first two fields are available to use in filters is because the are Dropdown (a.k.a selection list) fields. As per the documentation I provided, that type of custom field is supported for use in filtering for the board view in a Business project.
The reason the second two fields don't appear is because the are Labels type custom fields. Notice in the documentation I provided that Labels type fields are not supported, as indicated by the absence of "Labels" from the list of supported custom fields for filtering the board view of a Business project.
