I tried to add a user as a CC to all issues, and bulk change added the user and deleted all other users. How can I either roll this back or see what changed so I can manually re-enter?
The activity stream gadget can tell you what all have changed.
If you need to do a bulk revert of all the changes, I guess it is not possible unless you have a backup, and I am not sure how backups are handled in OnDemand (you could raise a ticket with Atlassian support and request for this)
As per the below documentation, you are not allowed to use the backup data for application data rollback.
