We're trying to sort attachments by date, but somehow it doesn't sort at all. It's very important for us to have this working as people are sending wrong files to the client now.

You should be able to sort attachments by using the pull-down menu on the right side of the attachments area: attachments.png
The option to change the sorting order by default has been proposed in the past in JRA-28290, but our development team has determined that they will not be implementing it at this time.
