We are currently looking into Jira and Confluence Cloud version and I wanted to know if there are any plug-ins/add-on's to protect PII data in the Jira Software Cloud version

Our company created and maintains PII Protector for Jira and PII Protector for Confluence apps, which can probably do what you need, but both are only available for Server and Data Center versions of Jira/Confluence at the moment. We are planning to create versions for Cloud in the future, but they are not yet available.
