Add issue types to the Epic hierarchy level - This is available on Jira Premium and not Standard right? If I configure this while I am on Premium, what happens to it after Jira Premium expires?

Yes that is for Premium and Enterprise only. If you downgrade, the issues will still be there, but the linkage will no longer exist.
