any idea how to add a specific label to Confluence page(s) from an JIRA issue post-function (e.g. when I close an Epic in JIRA, it would add a label "done" to a specific Confluence page)?

You may be able to accomplish this using an add-on such as ScriptRunner. Take a look at the Community post titled Solved: Create Confluence Page with label for some ideas.
