Can anyone point me in the right direction to fix the Activity Stream? As far as I know, we didn't update or make any backend changes to our account.

HI Tammy,
If you're on Cloud it's nothing that you've done. There is a known issue with the Activity Stream that you can find at JRACLOUD-66937.
If you are on Cloud let me know and please also vote for JRACLOUD-66937 so you can be notified when a fix is found.
