JIRA Demo - Custom Field not allowing edits

I'm setting up a JIRA demo to present to our engineers.  The cascading custom field I've set up did not allow me to add the cascading topics.  There isn't a 'settings' (gear) option on the Custom Fields screen, nor am I able to edit my home (default) screen.

Options for fields are set in Admin -> Issues -> Custom Fields -> <your field> -> Configure

The Configure option isn't there.  I've noticed once you create a custom field, you cannot delete or modify it.  I created a cascading field and it didn't give me to option to populate the cascaded fields.  This is where I found out I couldn't delete or edit.
