I need a calendar or timeline view of all projects. How can I create this?

Timelines and Calendars in Jira Work Management are project specific and you can't combine them with multiple projects.
You could do something like create a generic project and create clones of all of the other issues in your other projects, link them, and then keep them in sync as to dates. That's very messy, but there's not a lot of good choices there.
The other is to upgrade to a Premium Subscription then you could use Advanced Roadmaps which are like Timelines but can show multiple projects together.

Yeah that image is deceiving because that's the Advanced Roadmap and requires a Premium Subscription.

Hi, @Laura Salten. As @John Funk and @Dave Mathijs have already pointed out, the Jira Work Management timeline view only works on a single project at a time. And, a Jira Cloud Premium upgrade will be needed if you want to use the product you reflected in the screenshot above. (However, it's not clear to me that Advanced Roadmaps can be used with Jira Work Management. Perhaps it can, I've never tried.)
So, a more cost effective approach might be finding an Atlassian Marketplace app the fits the — your — bill.
Here is an example search you might use. But consider tuning the search (my red arrows) as you see fit.
Full disclosure, I work for a company that makes one of the products in the search results, however my purpose was to illustrate how to look for the right add-on. You should of course make your own decision about the best way to meet your needs.

The best way to visualize all your projects in one place is to use Planyway's timeline view, or calendar if you want. You can connect multiple projects and visually track their progress through multiple stages from one place.
Planyway is a robust team planner for better resource planning and resource management. It is simple in use and is free for teams of up to 10 members.

One way to achieve what you want is with the calendar dashboard gadget.
Keep in mind that only 20 issues can be displayed per day.
And another solution would be to search for an app in the marketplace.

The Calendar view currently only shows the issues of a single project.
There is no consolidated calendar view of all issues of all JWM projects.
That would be quite a cluttered view in my opinion.

As you suggested with the screenshot in reply to John's answer, this is possible with Advanced Roadmaps for Jira. For that, you need a Premium Plan.
