You can buy directly from Atlassian's website - what have you tried to do so far that makes you think you need contact details? (Although, if you really do need them, firstname.lastname@example.org will be happy to walk you through the website and answer questions if you're unsure)
You can get the quotes and invoices by creating an account and using the evaluation licence options. The evaluation licences can help you test JIRA is good for you and then be converted into real licences if you decide to go with them.
Atlassian don't do demos, but some of their partners will be happy to - have a look at https://www.atlassian.com/resources/experts/ to identify a suitable one for you.
...It's true that there are projects in Jira; but they are merely a way to cut off issues, to tell them apart from other sections of work and to apply rules that are specific to that team (the schemes)....
