The Classic projects are available on every site and they will not be removed, so yes, you can use the Classic projects in order to use parallel sprints while the feature is not added to Next-gen projects.
It’s not possible just to change the project type, but you can migrate the tickets created in Next-gen to a Classic project.

We will try this. Even in a modest team even with a team of 1, we can be working on mainline sprint as well as short term maintenance fixes on another sprint. So, parallel sprint so I would still vote that the Atlassian should prioritize this. We do love the next gen as editing much better and align with the next-gen Confulence as well.
