What type of project are you using: company-managed or team-managed?
You may find the type of project by looking at the bottom of the page by expanding the left-side Expand area.
If you are using a company-managed project, you may add fields to the backlog view by selecting the menu at the top-right of the page >> board settings >> card layout.
If you are using a team-managed project, I do not believe it is possible to add fields yet. Here is a suggestion to add that feature, but Atlassian indicates they do not plan to do this one yet: https://jira.atlassian.com/browse/JSWCLOUD-17336
