Need help to build a JIRA test environment to upgrade our JIRA version(JIRA software)

Hello everyone,

I am working in an organization with a role of JIRA admin. Previously the employee who was taking care of jira is no longer with our organization and has not provided the necessary information/KT regarding jira.

And know we are stuck in middle of a situation where we want to upgrade our jira version, Currently we are using 8.2.3 which has come to End of life(EOL). 

Request you to please provide the detailed steps how to create a test environment and how to upgrade our jira version. However we don't have any experts in our organization for the same.
