At present, I plan to migrate the information in JIRA core to JIRA software. Will there be any difference between installing JIRA software in windows and installing JIRA software in Linux

A tip on migration: you merge two Jira instances directly through a third-party app. This way, you spend less time on migration and more time tailoring your Jira account.
Also, before migrating to Jira, consider making a backup copy of your data. You can use an app like Export available on the Atlassian Marketplace or use the pre-built option.

There won't be a difference in terms of the Jira UI side but there will be a different process for Installing the Jira on windows or Linux.
Atlassian has already created very detailed documentation of Installation of Jira on both Windows and Linux. Please follow the document step by step.

At application level there are no differences between linux or windows installation.
JIRA Software include JIRA Core so, installing it you automatically will have JIRA Core working.

If you backup your current JIRA through an xml and restore it in the new environment there are no impacts based on the server OS.
