JIRA is sending a 'Subscription' email with list of issues as per the assigned Filter, but the email shows 'Priority' value with only the arrow icon, for example in screenshot below, shows only the arrow, but I want to see the Priority *description* as defined in our JIRA system (which is '2-High').

There is an article titled How to Add the Priority Field Into the Email Subject that links to Customizing Email Content. Take a look at this document to learn more about customizing the velocity template to make the outbound email appear as you would like.
You may want to try adding the $issue.priority.name as a value and see if that works for you.
