What problem are you trying to solve by doing this type of reporting? Knowing that may help the community provide you more targeted ideas?
In general, what you ask is not possible with out-of-the-box Jira unless you build a bunch of individual queries for each permutation. The reason for this limitation is that some of that data is only in issue history and that is not easily searchable. There may be marketplace add-ons for purchase to enhance reporting as you asked.

I basically want to see how busy the team members are, how busy they were in a certain time period ( e.g. last week), and how busy they will be in the next week.
Though, not a fan of time tracking. So kind of trying to find a solution to have an overseeing of the workload.

If you believe this is a short-term need to help improve capacity balancing among team members, consider if you can do this with a manual/team-supported technique, such as a spreadsheet. However if you believe you will need this for the long-term, please investigate marketplace addons to support time tracking/team capacity management. That will make it much easier to gather and use this information.
