We are a startup company of 9 people who are running a "Customer Success" sprint over the next 3 months. The goal is for the whole company to have this as the main focus and as the core value of each decision made: "Does this decision lead to higher Customer Success?" We are not sure if we understand the use of each feature correctly, but if we are correct, we believe that parallel sprints in one project could solve many of our issues. We wish that the team can have the possibilities to solve their to-do's simultaneously. Is this possible? Or can you advise us on any other way to solve this?

You can enable parallel sprint in Applications -> Jira Software Configuration. But this option for the whole Jira instance not for a project.
As Alexey and Tarun have mention parallel sprints are possible. Another thing to consider is to have multiple projects with independent sprints that can start and end as desired by the individual teams. What works best for you would depend upon understanding your situation better. While it bares some thought before diving in invariably you will change things up in time as you try different things until you find the right agile methods for your team.
