I'm working on implementing security levels on one of our Jira projects, and would like to know if it's possible to retroactively set the security level of all tickets within the project to one of the new security levels. It didn't look like there was a way to do it when selecting an Issue Security Scheme. Any help would be greatly appreciated!

From the security scheme you can select one of the levels as the default level, so that newly created tickets are automatically associated with that level. However, this doesn't apply to already existent tickets, so you will need to bulk update them.
You can bulk update the Security Level field for all tickets that match project = ABC AND level is EMPTY
You can also add the Security Level field on the Edit screen and update each ticket manually.
