I want to change Product field of various Jira issues using bulk operation, but on doing that all the Jira get deleted from the system

If perform the bulk operation and changes the product field i don't think so all the issue will be deleted.

Could you provide more information ,if possible screenshot? so that we will understand and we will be able to help you.

Okay it does work, but irrespective of how many issues I edit it shows a consistent number (13 in my case which was the number of first issue editing)

It depends on the JQL which your are using based on that it will filter those issue and you need to perform the bulk operation.
