I have an epic that has been accidentally included in a sprint.

 It was actually included in the previous sprint, and then when that sprint was closed it was automatically included in the next one. Because it was not visible in the backlog, it got re-included in the next sprint.

How do I move this back to the backlog (or at least out of the sprint)?

Hi, Ian!

There are two ways in which you can remove an epic from a sprint:

  1. From the sprint view click and drag the epic out of the sprint.
  2. From the epic's issue view, remove the sprint from the Sprint field.

Note that doing so won't affect the issues inside the epic, and the process would need to be done for all the required issues.

Welcome to Atlassian Community!

In order to remove it from the sprint you need to go to the issue detail view of the epic and then clear the field Sprint.

Interesting that I could not remove the sprint from the sprint field - there was not option to do this when editing the issue (unclear if this is a permissions issue), but I did manage to workaround this by creating a manual automation trigger to clear the Sprint field.
