We have a couple of Advanced Roadmaps, is there a way to be notified when the roadmap dates change?
As a workaround I can watch the epics, stories for changes, but when the dates on a roadmap are updated and submitted is there a way to be notified or to be aware there is a change to the roadmap.

Jira is issue centric in the way that it is designed to track data meaning it tracks issue history and change items at the issue-level and there is not a method to see or track the changes at a macro level, like a project-level overview or a plan level overview.
In advanced roadmaps, the plan data is pulled into a plan from the issue's current state and combined into a visual report of the issue, so in effect, advanced Roadmaps is designed as an interactive reporting tool to be the culminated view of changes applied to the issues and act as the location to view these details vs relaying the details to a secondary location.
You already noted a workaround of watching the epics and stories for changes as a workaround, but a more granular approach to this would be using an automation rule to receive notifications for changes to just the date values of the issues.
As an example, you could set up an automation rule with a trigger event for "Field value changed" using the Start or End date as the desired field and then use a Send Email action to a desired user or group of users.
This way any time an update to the dates is applied the users would be notified by the automation action.
