How do you add fields to a JIRA ticket during the creation process?

When creating a ticket, how can new default fields be added to the ticket?  I would like to add categories and sub-categories.

Welcome to Atlassian Community!

You cannot dynamically add new fields to the screen when you create an issue. The fields that you see has to be added to the screen used for the create view. See Manage issue screens for more information.
